Happy New Year! Time to get back to work (or school) and hit the daily routine again. For me, cooking is one of the most difficult things to get back to, besides the gym, after a long break of eating out. But, it's the feeling of being healthy and having a home-cooked meal that motivates me. So, I've made one of the my favorite, simple meals to ease back into the daily grind.
What You'll Need:
Step 1: Heat large skillet to medium-high. Add cup of water and and cube of chicken bouillon. Stir until dissolved.
Step 2: While the skillet continues to heat, chop chicken breasts and vegetables into cubes.
Step 3: Add the chicken to the pan and cover for 5 minutes.
Step 4: Uncover and add 1/4 cup almond meal. Stir. Then, add all vegetables.
Step 5: Cover again and let cook on medium heat for 10-15 minutes, or until chicken is cooked thoroughly. Enjoy!
